    Apple Doodles

    Apple Doodles

    Yesterday my son, Myk, and his wife, Marnie, invited my husband, Tom and I to dinner. When your kid invites you, you go! When I asked “What can I bring?”, Myk said “Dessert!”.  Well, I had been piecing all day, and didn’t want to head to the grocery store so I decided to  use what I had in the cupboards to make something. (Hmmm? Does this mean I was “being green” by using what I had and not driving to the store?) I had apples but no brown sugar so I sorted through my recipes and found a new one from Taste of Home that would fit the bill! They were yummy so I thought I’d share it:

    Apple Doodles
    2/3 cup of butter softened
    1 cup of sugar
    1 egg
    1 teaspoon of vanilla extract
    2 cups of flour
    2 1/4 teaspoons of cinnamon
    1 teaspoon of baking powder
    1 teaspoon of baking soda
    1/2 teaspoon of salt
    1 cup of finely diced peeled tart apple
    3/4 cup of chopped walnuts (optional but I used them)

    In a large mixing bowl, cream butter and sugar until light and fluffy. Beat in egg and vanilla. Combine the flour, cinnamon, baking powder, baking soda and salt and add to the creamed mixture. Stir in the apple and walnuts. Drop by teaspoonfuls on a lightly greased baking sheet about 3″ apart. Bake at 375 degrees for 13 – 15 minutes or until golden brown. Remove to wire racks to cool. Great with a cold glass of milk!!
